It doesn't go bad. I have salted bluegill I've had for a year now.
To keep the salted Bluegills long term do you freeze them ?
Na, I've had these on my boat for a year. If you wan tthe meat to stay firmer use this formula: Borax 3 parts, sugar 2 parts, salt 1 part.. This is what salmon, stealhead fishermen do out west to cure roe. their roe lasts and lasts. I've found that plain salt will kee pa very long time. The salt prevents bacteria from growing. No need to refrigerate. This is how meat was cured before refrigeration.
Do you scale the Bluegills?
No. Don't scale them. The scale and skin are what keep it usable for bait for the long term. the meat will soften over the long term but won't rot. The skin and scales don't soften. When you bait your line make sure there are no scales on the tip of your hooks or else you won't catch anything.
