I Had A Craving - So I Did Something About It.
It seems like for the last two weeks or so I've been seeing those Red Lobster Advertisements on TV and I found myself getting
hungrier and hungrier for the taste of some seafood. So, without feeling like I wanted to get too extravagant (expensive) with
the lobster or the more high line items; or actually going to Red Lobster and drop $40 - $50 buck$$ for my wife and I.... my mind
went to work on how I might calm this veracious seafood craving. :scratchhead
So, I went to the grocery store late yesterday evening and grabbed a few things to throw together what I will call 'a poor mans
seafood platter'. I bought some swai fillets, some baby shrimp, some minced clams, some bay scallops, some Pepperidge Farm
Savory Herb Stuffing... knowing I had all of the other makin's (i.e) (sweet onions, celery, and seasonings ) for my making my
vision a reality.
I got all the prep work done last night and put the seafood stuffing together and in the refrigerator overnight for maximum
marination effect. I had a lot to do today... so by the time supper time rolled around... all I had to do was make it happen... AND
MAKE IT HAPPEN I DID!!!! While everything was baking Karen threw together some of her signature slaw... and when all was
done... I slathered on a little shrimp sauce to the swai fillets and some alfredo sauce on the stuffing AND IT WAS ON!!!
