Christmas Eve Comfort Food
If you have ever tried smoked meatloaf you know it is a nice twist on a comfort food classic. My wish for a 3lb Crappie has not came through yet, but a 3lb meatloaf found it’s way on the Weber smoker this Christmas Eve afternoon. A pound of ground pork, a pound of ground venison and a pound of ground hamburger mixed with breadcrumbs, eggs, and various other spices and goodies make up this monster loaf. Throw it on a hot smoker with some apple wood and let her rip. The smoker hit about 350 and after two hours or so the internal temperature hit 165. Served with mashed potatoes, garden green beans and corn, this smoked comfort food classic is always a hit.
