My trolling motor appears to be on its last leg. (Well not completely, it's just the foot pedal and I'm hopeful I can get a purchase authorization from the wife for a new setup.)
I have a Ranger Reata fish/ski with some old electronics. What would be the minimum (price) equipment combo necessary to follow contours, spot lock, travel straight lines @ constant speed, etc? It would be excellent if trolling motor could be removed for family ski trips.

What volt you looking for? My opinion, buy once cry once. Budget for 3k or so if you're buying new stuff or you may could find a used one for sale. Quick detach bracket for family pleasure outings. I love my ultrex for the foot pedal when pole fishing, terrova or ulterra will do great as well. All depends on what your budget is and how far you want to go.
I have 7" and 9" units on my boat, want a 12" now.
Had a 24v, now have a 36v.
Have a 115hp, would like a 150.
Buy what you can afford and think you may need one day, feels I'm always upsizing. A 9" screen seems much bigger than the 7", especially when you run split screen mode

You need at least a helix 9 to follow contours with a lake master plus card. Then you will need at least an 80# 24 volt terrova with ipilot link.
Helix 9 sonar/gps gen 1 - $650 or so (amazon)
Lake master-$150
Terrova 80 with link - $2000
That's all new stuff. You could shop around and find all of that stuff used for possibly half that...
The helix 7 g2n is networkable, but the gen one was not Ethernet capable. You connect the link to your head unit via Ethernet.
On the fish finder, get the biggest one you can afford that will fit where you want to put it. Size absolutely matters in fish finders. ESPECIALLY ones with si or di.

You will also need a hummingbird Ethernet dongle to connect the link to your unit.
One thing I'll say about the link. If you have very much wind, whatsoever, it doesn't work all that good honestly. If you have little to no wind and the fish are at a certain depth, it's totally awesome. Set it, set the cruise control, and put the remote down, and just fish.
I wouldn't fish without ipilot. Period. It's a necessity IMO

If you are going to pull cranks you better go with a 112 on the troller, I'm running the Ulterra 112 Link and it does a great job. Batteries are key, group 31s whether you go with 24v or 36v. As far as depth finder, like pstone said, size matters, big screen makes big difference. Helix Chirp SI series can be picked up new for a decent price, the step up to the Mega series is a bit costly but there is a good bit of difference.
Look into the classifieds on the bass boat central forums website. They have a very busy electronics page that I have purchased several fish finders from and had no issues. Check it out, you will not be disappointed.
