dude, i love mine grilled on cedar planks like you are doing. the taste is simply excellent. i put a splash of virgin olive oil on mine, then sprinkle with a healthy dose of Tony on one side and blackened on the other - slap yo mama :cheers2
I like to grill them on the "half shell" ( leave the skin on one side of the filet ) . With the skin side down on foil , cook until flaky, then scoop the meat off with a spatula
