We are dieting and tonight we're cooking up two bags of fish. I've got a little of everything in those two bags, redear, catfish, a couple of crappie and bluegill.
We always fry our fish but are they good baked? Any particular favorite recipes for baking panfish?
Nothing beats the hot oil, but I cook fish in an air fryer quite a bit. Not as good, but better on the waistline.
I just tried for the first time blackened crappie. And I tell ya, it was absolutely fantastic.
Give it a try, don't think you will be disappointed.

We bake stripers , very good
Fish stew is good.
In a stock pot place 1/2 in thick potato slices, next add 1/2 in thick onion slices, cover with fish fillet ( cut in chunks), salt pepper.
Repeat layers ( minimum of 3)
On top pour 1 can tomato soup
Cook on med heat untill potato are done DoNot Stir
No other liquid needed
I put fillets on a foil lined baking sheet (spray the foil with Pam), brush them with Italian Salad Dressing then broil them turning them once. Time per side will be determined by how thick the fillets are. They are done when the flesh flakes off the fillet. While the dressing is mostly oil you only use a tiny bit. I sometimes add a drop or two of hot sauce to the dressing for a little kick.

I got this idea from ifish. We take fresh (or frozen) yellow squash and slice it crossways about 1/4 inch thick and put it in a large skillet with a small amount of olive oil. Cut up a large onion and put it in the skillet also. The skillet needs to have a tight fitting lid. Cook the squash and onion on medium heat just until it starts to get soft. Take fresh or frozen (thawed) crappie fillets and season them, we like cajun seasoning. Place enough crappie fillets on top of the squash/onion to cover it. Put the lid on it and cook on low heat for 20 minutes. Serve hot.
The crappie will be steamed and very tinder. Great dish for those looking for a health alternative to frying it. All my clients who have tried it love it. Our pastor tried it after his heart attack and now it is pretty much the only way he will eat fish.

Steam broccoli in a skillet, when it's almost done drain nearly all the water, add your preferred seasoning, cover with fish, ctumle4-6 strips crisp bacon over it, add a layer of your favorite cheese's, cover tightly, simmer on low until cheese is melted.
Do not get any on your forehead, your tongue will beat your brains out trying to get it
just was over at cooking crappie thread and mind was literally blown by all the different, healthy recipes there. try i, you'll like it. but couple of these are excellent too
