Really you need heads that have the sockets and it does take a little practice to do that kind of eyes. I use to pain on eyes, but pretty much quit doing that except on my little Roadrunners and on them I just need a Black eye and I use Vinyl paint for that.
I have like 1000 1/8 oz Walleye heads with eye sockets and they just sit here for the most part.

A trick that I learned because I have big clumsy fingers also is to use a toothpick. Take the toothpick and push the eye off of the plastic. The glue on the edge of the eye will stick to the toothpick just enough so that you can transfer it from the plastic sheet they come on to the jig. I also usually use a drop of the gel type of glue, made by Loctite, under the eye. The gel type works much better because it doesn't run. I hope this helps.
Well I should have said this already, but I use tooth picks a lot like to open eyes when I paint and I have to cut them down to do that, but when I am dealing with these little eyes and my also stocky fingers I use my bodkin to take off the sheet and also to handle it and I use either the Loctite Gel or the brush on super glue and I cut the brush down some on the brush on. I still just hate messing with these darn things, but I have thousands of these eyes and I still procrastinate using them, LOL!

Try using your bodkin to pick the eye up and hold, also to put in place. It also may help if you put a small flat spot on each side of the head.

I flat spotted the heads, that glue will mess up the paint real quick! I may do some more later! Wonder how 4mm eyes would look on a 1/16 head?

Looks great, I don't put eyes on my jigs for two reasons. First I'm going to shoot docks and there going to get nock off pretty quickly. Second I just have never liked the look of the eyes on a round head but like skip said the walleye heads look great. With all that said you did a great job on them.
