Lake Arthur Good Friday
I fried a mess of crappie for the family at lunch Friday. We had 80 people show up. I cooked fried sweet potatoes (fresh not frozen), homemade hush puppies with corn, cheese, and jalapenos, fried onion petals, fresh oysters shucked the day before from Houma, and crappie. They ate about 4 gallons of fillets. Then at 5pm we had 350 pounds of crawfish delivered. Boy we did it right. I only took pictures before everyone arrived. I got too busy and forgot to take action shots. When I am emailed some pictures I will post them. On Saturday afternoon I went for a short trip. I was starting to catch a few and my brother called and asked if I would pick him and my nephew up. Well I was the only one to catch a fish. They caught a few trees and stumps. I kept 5 and threw about a dozen back. We had fun though. I am still catching them on my hand tied orange jig 10 inches deep.

Happy Easter Gene. We have been doing it for over 20 years now on Good Friday. I have a 4 gallon Cajun Works fryer and do the cooking with out any help.

80 people is a big crowd! Bet it put a dent in your freezer stock. :) Glad you had a good time. We had a smaller crowd at my place this evening (about 15 or so), and cooked marinated steaks, rosemary garlic potatoes, green beans w/bacon-garlic-onion, corn on the cob, salad, mac n cheese, squash casserole, and several desserts like 'death by chocolate' and strawberry shortcake (made with Twinkies)....OMG....Lucky I could walk after that. :) I'm just glad these big holidays aren't too frequent, or I'd way 1000 lbs. haha!

It is 1:15 in the morning and you fellers are making me hungry. LOL. Sounds like everyone had a great time.

Don we use several of those at our gatherings at D'Arbonne and Toledo Bend. They can put out a bunch of food in short order. Very nice setting for a cook out.

nicely done...the fryer reminds me of the fish I dropped from the aluminum pan when assisting George at toledo bend, who is a great cook in his own right......

That sounded like two great meals, we did the bbq thing also at my oldest daughters. 14 adults, 1 teenager, 2 kids and 1 baby. All was good. Must brag on my ex wife's coconut cake. Just ate a piece we brought home. Yes we have a lot of inlaws and outlaws at our family meals. lol

Friendly outlaws are the best kind, I sure miss mine since they have gone on the their eternal rewards.
