Pickled beets is one of my favorites!! We eat about the same Bruce, you could eat at my house anytime. We usually have enough to feed 2-3 extra people.
I'll just have that cornbread right there in a heartbeat. That's all I'll need, love it. Here I am saying that while Ann is making a homemade Stromboli along with some butterscotch and chocolate chip cookies this evening. I'm spoiled for the word go.
I figured I deserved it, had to repair the water treatment system (sewer) today. Dirty work for sure.
That cornbread and a quart of milk will hold me. Of course the other could be dessert.
You speak of ham. A good friend of ours brought some "country ham" from Arkansas. This "country ham" is salty from the word go. Ann soaked it in some milk overnight, then made some "red-eyed" gravy for it. The red-eyed gravy involved coffee in it. That's what they do. Kentucky back woods folks tear this up. I did try it 30+ years ago while in Kentucky with her mother. I prefer a good brisket myself.
