I think most people are talking about spotted gar when they say "not good to eat".
Well I think it's fine table fare. Some people just don't care for it. Nice pictures by the way.
Cut into steaks (bone-in) about 1 1/2" - 2" thick, stuffed with garlic and seasoning and cooked in a sauce piquant - very tasty

I'm open to trying it. Just need some direction on how to cook it.
best to grind it with onions and peppers and seasoning....make patties or balls.....then can fry em or whatever at that point....if cooking without grinding first the texture is not flaky like fish we are used to......Quote:

They are so difficult to clean.
The large alligator gar steaks look a lot like sword fish steaks. I have cooked it using the same recipes I have used for sword fish and it is just as good. Now gar and pork balls with a red gravy is hard to beat too. I have learned the easiest way to clean is to freeze whole and cut steaks with a sawzall.
