Crappie Fish Cakes
Just made these for the second time. They are delicious. 1 lb filets in oven on tray for 20 mins @ 350. Remove and let cool...flake and blot with a paper towel to remove any excess moisture. In a bowl, combine an egg, 4 TBSP olive oil, 1 TBSP seafood seasoning (we use Paul Prudhommes). Mix/ beat well. Add a sleeve of crushed ritz and the flaked fish. Mix everything together and make 4 fish cakes. Then put in fridge for several hours or overnight. Then sauté or bake. Very simple and wonderful!!!

made these last night they were great only difference is I had was added a few zucchini chunks and use the new bacon flavored Ritz crackers :biggrin

Maybe try some fried Crappie balls.... We used to make clams balls back home , I'm sure fish Woukd work fine as well,,, z y personal favorite is Fish Tacos as of late,,,

Same way we have been doing Salmon patties for generations. Love them but have not tried them with crappie but will. We cook them in an iron skillet with oil. But the last couple of years doing them in a nonstick skillet without oil. Not as good but healthy.
Will be sure trying some next week with crappie.
