New crappie fisherman
I hosted some relatives this past weekend for a duck hunt and some crappie fishing. My first cousins 8 year old son was introduced to his first crappie fishing trip. as you can tell by the pictures he is now a "Crappie fisherman"
After fishing I introduced him to "coconut crappie" . They went home with a full stomach, a large bag of fillets and wonderful memories.
here is the recipe for "coconut crappie":

Crappie fillets
Coat fillets with "Fry Krisp" flour.
Dip coated fillets in a beaten egg & non alcoholic pina colada drink mix (1/4 cup)
Roll in 50/50 mixture of Shredded coconut/Panko bread crumbs.
Fry in coconut oil.
Enjoy!
For those who want a "coconut crappie sauce":
½ Cup Sour Cream
¼ Cup Non Alcoholic Piña Colada drink mix
¼ Cup Crushed Pineapple
2 Tbs Sugar (splenda)
