I use 210 Denier Flat Waxed from Danville. Good, strong stuff, and I really put some torque in the thread when I finish a jig.
I use both 140 and 210. I think the 140 hides easier on the chenille, and the 210 does thread necks very well. Look into yarn bodies for a different look, Skip will give you better info than I on where to find that. Danville is a good brand to stick with but there are a few others.
140 for me. It is strong and durable and like Skeet said it hides well. Both 140 and 210 will work but use the 140 for smaller jigs.
I like 210 Flat Waxed Danville, but also use some 140 in Danville as well as Ultra Thread.
Use a lot of 210 and use clear nylon/mono sewing thread. The sewing thread will not take a lot of torquing and has zero forgiveness if you rake it across a hook point. Mostly, use what ya got and learn what you like.
