My prop is a little chewed up and what to get a new prop. I am not sure what size or pitch I need. I have pretty sure the prop on it is stock. My boat currently will go 8 mph I would like to go a little faster if possible.

Looks like an 8.5 x 9 is standard with an 8 x 7" optional. There is also a 9.25 x 6.5" but this is a high thrust for the sail motor.
No more horsepower than we are talking, the higher pitch will only put more load on the motor which equals fewer rpm. The lower pitch will let the motor run higher rpm which in this case would be better. But I don't expect you will see a change in speed.
I agree with SM. Check everything in your boat and make sure it is loaded properly.
