A small local company wanted to throw an office party and wanted som bbq. I found a nice pair or briskets that were about 14 lb each. I added a few racks of baby back ribs. Owner of the co said she was tempted to eat all the ribs herself and the brisket would melt in ur mouth. Bad thing I didn't get the first bite so all this is hearsay.

James, I kinda want to but we are going to Branson for Christmas and not sure if I'll be back in time. Sure wouldn't mind bringing some ribs tho.
Randy, I normally cook ribs about 5 hrs (give or take). The brisket I cook low and slow. I set my smoker at 205 and usually wrap at about 5 hours but I let the outside color of the brisket tell me. Soon as there's a good bark. I cook em fat cap up. Then I insert a digital probe and wrap and continue at 205 until about 190. From there I probe for feel. Sometime it feels right as low as192 sometimes as high as 205. I want the probe to slide in like its going through butter.
These briskets took about 14 hours.
Man those look good! I cooked 6 Boston Butts to make pulled pork for my neices wedding last saturday, took me almost 20 hours! Sounds like you already know the secret to tender meat........Cook low and longgg! Thanks for the pictures!
Yes sir. I bet those butts were fine. I do like some Boston butts. Them and brisket are my favorites.
