to be specific it's theLowrance® HDS-7 Gen2 Fishfinder/GPS Chartplotter

It says it has structure scan. What is structure scan? Also, how does the structure scan compare to side imaging? I'm considering buying a unit, but all of this depth finder terminology is new to me.

Structure scan is the SI accessory for the HDS7

You have to buy a separate box and transducer to get sthe structure scan. It will give you Down and Side imaging.

so with just the unit it only has DI, and I would have to buy the structure scan for an additional $600 to have the SI?

Just the unit will have traditional 2d color sonar, the Structure Scan will give you side scan and down scan.

I would look at the hds 7 touch. If I'm not mistaken it has built in structure scan.
