I had a recipe to make omeletts by putting all the ingredients in a freezer bag and putting into a big pot of boiling water. Works great. I thought I'd do the same thing with Crappie and the results were very good. I added a few cajun spices, butter and it came out flaky and perfect. Would have been great for a fish taco. Might give it a try. If nothing else the omeletts are awesome that way.
Never heard of that before but it does sound good.
I've boiled it by putting the fillets in a cheese cloth tied up and dropped it into a pot of crab boil, dang it was good.
Just had one of those omlets this morning. Bet that crappie was good that way.
If you bring crab boil up and then turn down to simmer, you don't need the cheese cloth. Gently drop a few fillets then scoop out minute or so later. I do my fillets for crappie cakes this way.Quote:

Flathead chunks done in the crab boil are good too. Cook your taters for a little while and then add the fish and fresh corn on the cob and its on like donkey kong!
had me a parm crappie samich for dinner--two big ole fillets on butter bread mayo and cheese--that crab boil thing sounds awesome
