smoked crappie dip with crackers
Thought I'd share my smoked fish dip recipe, everyone who tries it loves it, bet you will too. I start by brining about 10 nice crappie filets in salt and sugar for about 20 minutes, then I rinse them, pat dry and spray with cooking spray. Next I coat them with lemon pepper and put them in the smoker for about 1 1/2 hrs with hickory. Let the fish cool until firm in the fridge, then shred in a food processor. In a large bowl I will soften 2- 8oz cream cheese, add 1 cup sour cream and 1/4 cup miracle whip salad dressing. To this I will add 3 stalks finely chopped celery and one medium onion, 1/4 cup dried parsley, 1/4 tsp garlic powder, 1/4 tsp onion powder, and 1/8 tsp cyan pepper. Now fold in your shredded fish and aprox. two tsp tapatio hot sauce. You can add more or less hot sauce to your own tastes. We usually spread on town house crackers or something similar.
