I get the oil to 350 and start frying, trying to keep it between 325 - 350. I store my used oil in a different container.
I try to maintain my oil at 350 as close as I can.. I strain my oil and keep it in a separate container in the fridge but I use it as my everyday cooking oil, not sure I'm comfortable in keeping it for an extended period of time... It doesn't seem to make a difference in my everyday cooking that is has been used to deep fry fish in.
350 to 375. Filter it & keep it separated from new oil in a cool, dark place, out of direct sunlight.
What he just said. :ThumbsUp
X2 Paper paint strainers found at auto parts stores or paint suppliers work well to strain with a funnel. Just throw the paper mesh strainer away when finished.

375 for me always seem to work well with peanut oil. I try not to let it get under 350. With canola oil I try to keep it around 350.
