Cajun Poached Crappie
Super simple, and excellent tasting. Just put about 1/2 inch water in a deep skillet. Add cajun spices, paprika, cayenne, black pepper, etc. directly to the water. The more spice you add the hotter the fillets will be. I add a lot for myself and my sons but just a touch for my wife and grandsons. Bring the water to a boil. Drop in fillets. Cover and boil for 2 minutes. Remove lid and slowly scoop out fillets, allowing some of the floating spices to get onto the fillets as they come out of the water. No oil, no batter, just good ole crappie fillets. But be warned, without the batter and oil you may find yourself eating more than normal as they are not very filling. Also, if you are not careful, your tongue might just slap your brains out with this one.:yikes

Charliee, I can't imagine that a little white wine and even a squeeze of lemon wouldn't be a good addition!
