I have been trying to get a thick corn meal batter on my crappie fillets but have had no luck. I would really like to hear some of you guys recipes or techniques for a thick batter on your fillets.

I use Drake's Mix. Just add enough water till you get the thickness you want. Work's for me...
If I want a thicker batter, I drain my fillets and make sure they are dry as possible. Coat them with plain yellow mustard and then roll in cornmeal.
I use a tempura mix. Instead of water, I add COLD beer. The amount of beer added will adjust the amount of crust. Here's dinner from last night:
