Since No One is Fishing, What is Everyone Cooking?
My second passion other than fishing and drinking beer is cooking outdoors. I cook on everything, smoker, gas grill, charcoal grill, dutch oven or open fire. I thought it might be interesting to see what everyone else likes to cook. I have recently started cooking fish more and more either on the smoker or on the grill.
I am going to cook chicken thighs and chicken breasts on the grill tonight. I am trying a new recipe using a new marinade for the chicken so hopefully it will turn out decent.
Tomorrow night is crappie on the smoker. I finally found a way to smoke crappie on my Traeger that works really well! I dry the crappie fillets well and coat them with a little seasoning. Rub a liberal amount of the new olive oil mayonnaise on them and then roll them in crushed Ritz crackers. Put them on a sheet of heavy foil and smoke at 225 degrees for about 30 minutes. Crank the Traeger up to about 350-375 degrees and cook until flaky. Damn fine eats!! Thumbs Up
