Conner .... I don't think she has to worry about gluten, unless she uses certain types of seed flours (wheat, oat, barley, etc). Tell her to dust them with corn meal & fry them up .... or broil/bake them (if frying isn't an acceptable option). Check this : Gluten-free diet - Wikipedia, the free encyclopedia

Thanks to both for advice. I agree with you, crappiepappy, that cornmeal shouldn't hurt her, but she was in healthcare for 40 years and she is worried about cross-contamination. She said that she is going to order some of the Red Mill cornmeal, so maybe she can have some good fryed crappie soon. Thanks, Conner
