1.5 cup corn meal
.5 cup flour
1 tsp baking powder
.5 tsp baking soda
1 tbsp sugar
1 tsp salt
1 cup grated cheese
1 can corn
1 tbsp. jalepano
1 egg beaten
1/4 cup onion
1/2 cup beer (or enough to dissolve the flour/meal)
Combine all ingredients. Onion and/or hot peppers are optional. This recipe makes some great hushpuppies, just don't make em too big (or they get done on outside, not done on inside). You can also cut the recipe in half.
Hey Ripper, somewhere a few mos. back there was a thread devoted to hush puppy recipes. It may be back a ways in the Off Topic Forum, I can't remember. There were a pile of recipes and a couple I tried were excellent.
I seen your location and would like to ask you if there is still a little Cajun cafe that sells frozen and take-out stuff at the base of the I-10 bridge just before it crosses Atchafalaya Basin coming from the west. It would be on the NW
corner of the intersection in a little L shaped cedarwood business center that mostly was closed up. Landrys Rest. nearby. They had some seating inside and specialized in Po-Boys-shrimp, oyster, mudbug, gator...big gas station across the street (Texaco?), on NE corner of intersection.
Just curious, one of my favorite places in the world. Use to live near Houston and travelled that path frequently.

I think the place you are talking about is chicken on the bayou, if that is it yes it is still there. going rip some lips tomorrow in the basin will check to make sure have to pass infront of . thank yall for the info on the puppies.
1 box Jiffy Corn muffin mix.
1 Japalano diced
1/2 small onion diced
1 tsp sugar
1 tbs salt
a few cranks of the pepper grinder.
Follow directions on the box of muffin mix, except do not add milk. Instead, add just enough beer to make the batter. Remember, it is easier to add than to take away. If you happen to add too much beer, add cornmeal until it gets back right.
Drop small spoonfuls into oil. While cooking, they will roll over on their own if in deep enough oil.
2 cups self rising meal
1 cup self rising flower
1 egg
Dash of salt
dash of garlic powder
plenty of black pepper, guessing I use at least 2 table spoons full
2 onions chopped
Beer is the best liquid. but milk works also.
Mix everything in and then if you need it add liquid

Is House Autry a local brand or what? I've never heard of it. Does Wally World carry it?

House Autry has been out for years. All the grocery stores carry it. They have a great fishbreader too. I'm not impressed with the cornmeal mix they make for cornbread. But the rest has been at their best. You will not be disappointed....
