I usually only eat crappie and catfish - how do sunfish taste? I filet both crappie and catfish so there are no bones in them (kids eating too!). Can you filet these so they are bone free? I have heard in the past they taste great but are 'full of bones' - what's the story?

we catch some pretty large bluegill/perch/sunfish at the lake of the ozarks, but just toss them back. my 6 year old will be pretty excited if we start tossing some of the big ones into our basket!
i would have done it all along had I known they would filet just like any other fish and be boneless - I was always to worried about having my kids eat fish with bones (actually, worry about myself too :))
