Good catch, perch are delicious
You can fillet Pike so they are boneless but it is not anything like filleting a bass or perch. Too complicated to describe here but you can find methods on U-tube. End up with about 8 pieces, but if you do it right they are all boneless.
And before anybody says you can cut notches in them and fry them crisp and the bones dissolve, all I got to say to that is you catching a different fish than me. We have tried that numerous ways and you still got a mouthful of bones. Fried them to where they looked like a potato chip, still had bones in them. So, phooey on that.

Like others have mentioned they can be tricky to fillet. Watch the YouTube videos a few times and you'll have it! They are actually quite delicious. Fried, pickled, grilled, broiled, or make some poor mans lobster out of them.
Poor man's lobster recipe:
Pike fillets cut into 1x2" pieces
4 cups water
Lemon juice 1/2 cup
2 limes (juice)
2/3 cup sugar
1 stick of butter
1 tsp garlic powder
Salt and pepper
Bring water, juice, and sugar to a rolling boil
Place pike pieces in boiling pot
Boil for 3-4 minutes or until meat is white and firm but flakes easily.
Let drain on paper towel.
Melt butter and add garlic powder, salt and pepper to taste.
Dip boiled pike in butter!
It taste surprisingly like lobster!
7up or sprite will also work to boil pike in.
