    Default Smoking bream, bluegill and other pan fish


    Alright, my wife just bought me a nice smoker for my birthday. I need to know how to smoke bluegill and is it worth it? Anyone with recipes and the know how...do I fillet or do I put the whole fish in minus the head? Do I scale it???? Someone let me know.

    I smoke fish frequenty. I never tried gills. Oily type fish smoke the best, like salmon and trout.

    Definitely use a lighter wood. Alder if you can get it or fruit. Apple, cherry, etc.

    I actually smoked about 4 bream fillets yesterday with my ribs. The hickory was overpowering. I didn't leave it on there too long either. It will be a trial & error deal for sure cause as Hoosier pointed out oily fish is better.
