I worked Mike's crawfish fest in Memphis 4 years with 100 lb bags. There was 4,200 to 5,500 lbs sold each year. 1 years was rain, 1,800 lbs wasn't sold. The truck had a 4,000 lb sale. I bought 500 lbs cooked @ $0.10 per lb, sold 400 lbs @ $0.20 per lb. The restaurant got 50 and 100 bags.

The cooker was built by Menard Manufacturing, they will custom build whatever size a person would want.
