I bet it would. I know it would preserve them and that added twang just might be the ticket. That's got me thinking maybe just maybe some juice from them pickled pigs feet would be a good secondary flavor to add to your arsenal. I know I caught a lot of bass back in the day with them pork trailers on a jig.
