Something I picked up from my mother and I still do. take the removeable parts grates, trays etc, place them in a big plastic bag, add 2 cups household ammonia, seal bag and set in sunny spot for a day. after they set, pull out and rinse with garden hose, let drip dry. Seal the bag and toss in garbage can.
It will take off some really old bake on. I found a tow boat anchor buoy while turkey hunting on Brandywine Island 20 something years ago. I went back and got it that summer and converted it to a BBQ pit. I clean the stainless grates about every 5 years and that's the way I do it.
I remove the racks and brackets. Heat the unit to 125 degrees and spray the inside with vinegar, wipe with a plastic scrubby, wipe with paper towels.
Leave the door open for a few days between cooking.
