I sometimes smoke tomatoes. They are easy, and really pick up the flavor of the smoke. All I do is put them in a foil pan with small holes poked in the bottom, and set it in the smoker. Thirty minutes is plenty for a good, strong flavor. I use them in a salad dressing recipe, and also in a cream sauce for steak. I cut the tomatoes into large chunks before smoking because it makes them easier to puree for these recipes. But I bet they would smoke just as well cut in half or left whole, given how much they pick up the flavor. Whichever way you plan to use them, I'd prep them first and then smoke them, rather than trying to work with them after.
