I leave my fillets in ice water until I'm ready to cook. Use only corn meal. No flour. Take fillets out of the water, shake gently, into the bag of corn meal and right into the oil. The colder the fillets, the better the meal sticks.
I'm with Gomer on this one. Paper bags will help with excess moisture. Can do a bunch of fillets at once too.
