Seasoned with lemon, white wine, garlic, onion, salt, pepper, and old baygot the smoke rolling
moved it over to the hot side to finish off
turned out mighty good. Bon appetite!

What type of wood do y'all use to smoke your salmon? I usually just put mine on cedar planks over hot coals, but I'm looking for a more smokey flavor without being over baring.
I used natural lump hardwood charcoal, then had a mixture of apple, pecan, and hickory chips that I had soaked in water to get a good smoke going. I have done the cedar plank before and it's good. I have been told cherry wood gives salmon a great flavor but I haven't tried it yet.
