DonDon out to chime in here. He does a lot of different things with sea food and has some good recipes. Look in the recipe thread on here and check out the Parmson crappie recipe. Don't see how you could go wrong with that one on specs.

Hi all. Does anyone have a good and easy speckled trout recipe? My wife doesn't like fish so I was looking for possibly something where I can mix the fillets with Italian bread crumbs, butter, parmesan cheese, etc. I am a terrible cook, so any recipe you have will be appreciated![]()

pan sear them and cook come angel hair pasta with a lemon butter olive oil sauce. She'll love it. It's simple.Preheat the oven to 350, then get a pan on top of the stove real hot. Not smoking but real hot and add about 3 tablespoons of Olive oil and the same ammount of butter to it. Once it melts, add the filets (add salt n pepper) to it for about 3-4 minutes. Now just flip them over, top them with some panko bread crumbs and grated parm cheese and put them in the over for about 5 or 6 minutes and the topping is light brown. Once they come out, hit them with a little freshy squeezed lemon juice and serve with the pasta. YUMMMMMMM
