Ha!! I'm glad to see there a 3rd person that cuts that little bite out. I thought my dad and me were the only people who did that. All my friends think I'm ignorant for worrying about that little bite, but it was just the way we ( me and dad) have always done it.

On a big filet, that's a BIG BITE of meat. Now, my wife cuts them off when she pan sears them cause they fall apart. She does cook them separate though cause those are the best bites and I claim them.lol

Them little chips are the best part. IMO

HA! I thought I was the only tight wad that tried to conserve every ounce of meat. One of my fishing buddies was making fun of me for taking so much time making sure I got all the meat from around the rib cage.
