Nice lookin' rig feesh! Looks pretty stable according to that pic above.
You should just be able to remove the switch from the head and extend the wiring and re-mount the switch in a plastic rain-tight electrical box, then go to Radio Shack and get a knob for it.
Been a while since I'd posted them threads on the stick-steering, but I think I'd posted most of my "thoughts" and pics there. I haven't actually done it, but if I can answer any questions, don't hesitate to ask.

The test run went very well, i am impressed with the stability of this boat. I launched it in my Dads pond, he and i got in and paddled around, we crossed a submerged log that was just under the surface, then ran it up on a stump on purpose just to see if it would dump us, it just slid off. I let him out and stood up in the rig just like the guy in the pick Slablapper posted. It is extemely stable. I am sure i could turn it over if i wanted to, but as long as you respect it as a small craft i do not think it will dump you unexpectedly.
I like it.......it will be a great boat for smaller shallower waters. As you work on it and fix it up post some pics along the way.
I will give you $300 for it. 350 if you bring it to me..
