We used to have a butcher in the meat market at our local grocer here. He has passed now but there was a guy named Taylor here in town who had this butcher keep fillets like that and they got to be know as Taylor cuts. We would go to the meat market and tell em to give us a Taylor cut, and they would cut ya a fillet just like that. Im sure Feesh has had em too. They were aged just rite and I mean they were fine.
