    Crunchy Cucumbers and Onions

    This is for one quart so if you do 2 just double it. They are not pickeled so they will last about a month in the fridge. As you empty the jar you can add more so I only do 1 or 2 at a time. Pack your jars with a layer of cucumbers then a slice or 2 of red onion, I think the red onion taste better than the white ones, although real vidalia onions are good also.

    1 cup of white vinegar
    1/2 cup of cooking oil
    3/4 cup of sugar
    1 teaspoon of celery seed
    1 tsp black pepper
    1 tsp salt

    Put ingredients in a boiler and bring to a slow roll stirring often. When it comes to a slow rolling boil turn it off. Let set for just a minute then pour it over cucumbers untill jar is full. Let set for about 10 to 20 minutes they will settle down a little bit and you can add a few more cucumbers to it. Put lid on jar ,set in fridge for about 12 to 14 hours then enjoy. Have a very nice taste and a really good crunch,

    I grew up eating these, but only use vinegar, water and sugar. have some in the fridge right now.

    They fine arent they Feelay? I had them both ways but I think the oil gives them a little more crunch but they good either way. Not really sweet or sour kinda in between.

    The red onion or vidalia onion gives it enough sweet to me without adding sugar.
