1 lb. your choice sausage
1 lb. thick cut peppered bacon
cheese/veggies/etc. for filling (like diced Jalapenos)
spices as you like them
Put sausage in 1 gal. ziplok bag and roll out to fill bag.
Cut sides of bag and unzip. Fold it open. Transfer sausage onto wax paper.
Spread your choice of fillings over top of sausage and roll up.
Lay out a weave of bacon. (You guys are smart...figure it out).
Roll the sausage up in the bacon peeling the wax paper as you go.
Refridgerate over night
Fire up the smoker and stabilize @ 225-250 deg.
Smoke phatties (on the smoker guys) for 4-5 hours or whatever
your smoker requires. Don't over do the smoke or time.
Serve sliced like bread. Yummmmmmmm!!
