a little bacon drippings and flour in a cast iron skillet. stir constantly making a roux add diced tomatoes, and some mater juice, a little water, whisk till any lumps are gone on medium heat. Add black pepper, onion powder, garlic powderand salt to taste. turn down heat and stir frequently until it cooks down. Then add a pad of butter, lemon juice and hot sauce to taste. This is best when using fresh maters from the garden if you do this make sure they are peeled and seeded. Are you sure your from MISSISSIPPI? I just can't comprehend living here and never hearing of mater gravey
