Thinking about building me a smoke house and got a ?.How long do you leave ham's in the cure (salt or sugar) then how long do they hang and smoke?Had this project on my mind for awhile and this cool weather got me motovated.
Good idea but I'm talking about the way old folk's use to do it at hog killing time,salted down and cured then hung in the smokehouse.How many day's in the cure and how many day's in the smokehouse no heat just smoke.
go to google ya gewb and type in curing hams and old timers way or something like that. Sure you'll find something that way

Gravedigger, I wish I had wrote it all down, when I was a kid Granddad and Daddy would kill hogs and cure hams and Mom would make lye soap out of the fat. That lye soap would get diesel out of blue jeans, but would also take the hide off your legs if Mom made it too strong.
