Filet it like any other fish then cut off all of the red meat.
Rather have the sauger.
Like Morris said. Filet them and cut the red meat off. They'll be a thin layer next to the skin and a blood line down the middle. Get rid of that and it's a fine eating fish. If you like redfish, you'll like stripers. They are great on the half shell
