    Default Grilling Some Filets

I've got the charcoal lit, the hickory chips soaking and the filets on the non stick foil. I'm trying two different seasonings.

Sounds good Scott. I grilled some on the gas grill last night and had fillets for supper last night and for lunch today.

They're hard to beat. The ones with Italian salad dressing and lemon pepper are done and the ones with olive oil and Webber seafood seasoning are cooking. I'll report on which was best.

The lemon pepper on top and Webber on bottom. I think the lemon pepper was the best but both were good.

The fish up here arn't thick enough to do that to without the skin and scales. They dry out too bad. Turn out good in I use the half shell. Got to get them ribs out though, they spoiled the whoile meal. Next time, scales and skin, NO ribs.

The trick is to coat the filets with olive oil and cook them on non stick foil over a hot fire. Six minutes is all it takes. We will try some of those Butla slabs like that in a few weeks.
