I have a Rapala electric fillet knife...I just unplug it and wipe it down with a damp soapy rag and wipe it dry with a paper towel. I am careful not to let water get inside where the motor is.
I have spent most my life fishing........the rest I wasted.

Plug it in and get in a tub of water, stick filet knife under water and turn on. Just kidding don't do that, go get some electrical contact cleaner or non chlorinated brake cleaner. Spray that in side until it runs clear then let dry for a few hours and it should be fine.
