    Default breading with "other" stuff

    I won't go so far as to say I ever get tired of eating crappie, but sometimes
    want to try something new - a couple of times, we ground up "Cheezit"
    crackers in a processor and rolled the fish in them and fried - I liked it
    pretty well. Anybody else tried this? Saltines or bread crumbs are pretty
    good too.

    Jeff, I've used ground up Golden Grahams cereal in recipes for meatballs and meatloaf in the past. I've never tried it with crappie though, but this has got me thinkin' about it.

    I've tried Montreal seasoning on Salmon and other kinds of fish. Never thought abouttrying it on Crappie. It should be good.

    Hey J, I'll send you a receipt for Blackened Crappie when I get home. They are every bit as good as breaded and fried if you use the fresh ingredence that it calls for. Oh the only thing is you had better cook them outside. My wife tried it on the stove one night the our local forefighters ended up eating with us that night....LOL

    I like Zatarrains <sp?> with a little crushed ritz crackers in it.

    Look forward to that recipe, Tommy - I tried blackening them outside a
    few times, but didn't have something right. Not bad, but needed some help.
    Do any of ya'll ever feel like Forrest Gump's buddy in the movie, talking
    about shrimp? We got crappie this, crappie that, LOTS of ways to fix them :D
    I usually (lazy) just dip them in a egg/milk or beer mix, sprinkle a little
    Tony Chacher's Creole seasoning on 'em, and roll in YELLOW corn meal,
    but it is good to change things up sometimes. Would like to find some way
    to bake them too, but I think I am just too stuck on fried to give it a fair
    shake.

    Try a bit of wrights liquid smoke in your egg mixture the next time. Do it towards the last of the fish, to test it to see whether or not, you would like it on a full batch for the next fry.

    i bake a lot of my fish cuz i get tired of fried stuff all the time. the thing with crappie is that the filets are thin, so you don't want to over cook them. try foil packets.....diced tomatoes, diced onions, maybe some freshly pressed garlic, salt, pepper, a dash of beer, fold up and place in oven - uh.....350 or 400 or on the grill or on the edge of the fire and cook about 2 minutes or so.

    sometimes i use dill, other times i use lawry's. tony's would be good too.

    Hey Gals & Guys try this one. 3/4 cup of Adams Lemon Pepper, 1/4 cup salt, 1 small bag of Aunt Jamima white corn meal. Mix that together in a gallon zip lock. You can use it for several cookings. Then fry for 5 minutes in peanut oil.

    One other fry mix that we use is cup of Tony's, 1/4 cup of Zatarans, or Adams Cayenne pepper, 1 small bag Aunt Jamima white corn meal. This one will light you up....Adams Cayenne is not as hot as Zat's

    Will post Blackened reciept when I get home. Can't remember the exact measurements of everything.
