LoL, friend of mine fixes something similar that is really good. He slices them in half, puts in the filling then presses in one of those little party sausages then wraps that in bacon. Pretty good snack. Just to bad those peppers are on my do not eat list now.

Smoking takes some of the heat out of them. The heat is in the tops, seeds and membranes, removing those drops the heat a lot.

drops it too much for me. Not enough for my wife. :Doh: But I still enjoy them a lot. And she just won't eat them at all.

I usually cut the peppers in half before adding the cream cheese (and a chunk of boneless/skinless chicken breast!)

I'm also WAY more generous with the bacon!

Hahahah, I love the name of the recipe. We make a variation of these with pepper jack cheese and chipotle hot sauce. Always keep a roll of tp in the freezer for the next day!

Dang man them look purty darn good.

Those look really good! Gotta drink low carb beer to make up for the bacon ;)
