New Lowe 1860 advice please.

I just bought a 2019 Lowe Roughneck 1860. Modified V Jon boast. I would like to install a minnkota deckhand 40 anchor and a trolling motor. Looking for advice on where to locate them. Does the anchor really need to be dead center? I will do some river fishing with it. And would like to mount it just left of center.
Also this boat has a small front deck. Would mounting the trolling motor on the port side so that when it is retrived it lays along the side of the boat be a good idea? The bow has about a foot of level space to bolt to, then it drops down about a foot to the deck. Thanks
