I know there have been a few people here that have gone out with him and had a lot of fun. He used to be more involved with CDC, and was always a stand up guy. The redfish I've caught before hit hard and pull like a train. A lot of people love to eat them, but I didn't care for them fried. A buddy leaves the scales on his and grills that side down. I'm sure there's an abundance of recipes online.

cajunfishingadventures.com is a one stop for fishing and duck hunting if in season. From fly fishing for bull reds to the blue water this place in Buras (down the Miss River on the west bank) fills the bill.
Very nice resort type accommodations with a great cook. Ryan Lambert has many (16 or so) guides that work from there. He is usually booked but may have cancellations due to the flood in sola. Check it out.

I would not use anyone but Markham! I promise you, you will NOT be disappointed!!! I will be going down there at the beginning of October to visit with him and his fiance.

There are a couple of different ways to cook them that they will come out good. If you want to fry them, then make sure you cut out ALL of the red meat. You will lose some of the good meat but it will definitely taste better. I don't filet as close to the skin as I do with other fish (that will leave most of the red meat on the skin) and I also cut along the filet, where the red meat is, and this will give you 2 separate filets and a strip of red meat - throw the red meat to the cats! Now if you want to grill it, you cut it down the same way you would to filet it but you cut through at the tail (leaving the scales on). Take the filet and put it on the grill, scale side down, and put some seasoning, onions, lemons & butter. Cook it until the meat is white and flakes with a fork. I agree Markham is who I would go with, just search some of his old posts on here. He is truly an amazing very detailed fisherman!!
