I fish a kayak at times and am wondering what the "two pole method" is.

Two pole method is I use 2 12ft crappie rods with double jigs and either hold them while drifting or lay them in front of the kayak.. Poor mans spider rigging lol

OK I can relate to that. I use 2 10' rods, but with just single jigs. Problem is that there are only a couple of places that I can get it to work really good. Really fun when it's working.

How long are the lines that are in the water on the 10' rods?

For me anywhere between 5' and 10' depending on where I'm finding fish on that day. Basically moving real slow and fishing almost straight down.
