I've always done the water. Just takes up too much space.
In water myself, no freezer burn. Not that much more space, just enough to cover the fillets and lay them flat until frozen. Stack nicely. What takes up space is those frozen chickens, told Ann several years ago - they have to go. I have a large freezer in my shop just for crappie filets, red snapper fillets my son brings me, peeled crawfish, alligator, rib eyes on sale, choice cut briskets, etc. She has to make do with the refrigerator/freezer in the house.

On the big 4 there is no where to put the boat when you launch except on the concrete ramp....no dock and the banks are all rip rapped
